Potato Salad Ideas for a Birthday Bash

I need some advice on potato salad for my dad's 70th birthday. He's serving burgers, and I want a side that goes well with them, but I'm a bit stuck on what to make. I don't usually make potato salad, so if anyone has a favorite recipe or a twist that makes it special, I'd love to hear it. Also, any tips on keeping mayo-based salads cold outside would be great, too. I'm really hoping to avoid store-bought this time around.
